Spicy Miso Soy Milk Ramen (Vegan)


This flavorful soup combines gochujang, ginger and jalapeno – adding pops of heat and sweetness – with silky Japanese soy milk. Customize with your favorite ramen noodles and toppings!

Ingredients

Spicy Miso Ingredients

  • 1 cup pitted dates
  • 2 ½ cup chopped onion
  • 2 ½ cup chopped carrot  
  • 2 Tablespoons diced ginger  
  • ¾ cup chopped jalapeno
  • ½ cup + 2 Tbsp gochujang (about 6oz)  

Ramen Ingredients

  • ⅓ cup spicy miso  
  • ¾ cup + 2 Tbsp Japanese soy milk (7 oz)
  • 1 pack of Ramen noodle
  • 1 Tbsp soy sauce  

Topping Suggestions

Roasted vegetables, cauliflower, walnuts, egg, tomato, black pepper.

Instructions

Spicy Miso

  1. Combine and saute all ingredients except for gochujang until soft and caramelized.
  1. Add gochujang and blend everything until smooth with a hand blender.  

Ramen

  1. Combined spicy miso with Japanese soy milk. Heat on medium.  
  1. Cook the ramen noodles and put into a bowl.  
  1. Add the soup and soy sauce to the bowl.
