For a unique treat, this dish pairs quinoa and flax seeds with the warm, sweet combination of apples, cinnamon, vanilla and maple syrup. It’s dairy-free, too, thanks to the Japanese soy milk.

Ingredients
½ cup quinoa, dry
1 cup Japanese soy milk
1 Granny Smith apple, peeled and cored
2 tablespoons ground flax seeds
¼ cup maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Instructions
Heat oven to 350F. While the oven is preheating, add quinoa, Japanese soy milk, cut apples, flax seeds, maple syrup, vanilla extract, and cinnamon to an 8x8” baking pan and mix until combined.
Bake at 350F for 30-35 minutes until golden brown, and drizzle with additional maple syrup if you’d like.
